Ingredients - serves 2
- 2 5-6 oz pieces of tilapia or basa fillet
- ½ cup chipotle salsa (recommend
Muir Glen Organic Chipotle Salsa)
- splash of white wine
Preheat oven to 350.
Rinse fish and pat dry.
Place fish in small, oven-proof, glass baking dish.
Spoon chipotle salsa to cover fish.
Splash with white wine or vermouth.
Cover tightly with aluminum foil for 25 min.
Poach fish for 25 min.
Uncover carefully and serve immediately.
Serve over rice, or steamed dark green vegetables such as spinach, kale or chard sautéed in garlic and olive oil.
