Pita Pizza

Ingredients - 16 slices

  • 4 loaves white pita bread
  • 1 tbsp butter
  • 1 tbsp canola oil
  • 2 cups sliced mushrooms
  • 2 large shallots, chopped
  • 2 cups sliced broccoli florets
  • canola oil spray
  • 1 cups thick, spicy, marinara sauce
  • 1 cups shredded mozzarella cheese
  • 1 bunch basil
  • cup fresh oregano

Preheat oven to 375 degrees. In a medium size fry pan melt 1 tbsp butter in 1 tbsp canola oil over medium to low heat until butter is hot. Chop cup basil. Reserve remaining leaves for garnish. Add sliced mushrooms and saut until tender, about 5 min. Remove from pan. Set aside. Brown shallots until golden then add broccoli. Set aside. Spread marinara sauce evenly on pita bread leaving edges clear. Place 2 tbsp mushrooms over marinara sauce. Place 2 tbsp broccoli on top of mushrooms. Sprinkle with mozzarella cheese. Sprinkle with oregano. Sprinkle with chopped basil.

Spray cooking sheet lightly with canola oil. Place pita on cooking sheet. Bake in oven until cheese melts and pizza is very hot. Do not overcook. Remove from oven. Let stand for 2 min. Cut in quarters and serve over a bed of the reserved basil.
