Julienne beets, celery root and then carrots separately in cuisinart. Clean butter lettuce and spin dry in salad spinner. Arrange butter lettuce on a salad plate plate. Decoratively arrange beets, carrots, and celery root on the lettuce. Garnish with endive in the center and pour a small amount of vinaigrette on top of salad and serve chilled.
Combine salad dressing ingredients in cuisinart and blend until creamy. Place in air-tight jar and refrigerate. The dressing will keep up to two weeks. Shake well before using.
